I ate the inspiration for the pizza in Chicago. I have thought about it numerous times over the last year and a half and finally decided it was time to make my own version. I promise, once you have it you won’t be able to stop thinking about it! The trick is buying a whole large pickle and slicing it super thin and covering the entire crust with the pickle slices.
Ingredients
- 1- 12 inch store bought pizza Crust
- 1 large kosher dill pickle, sliced super thin
- ½ C store bought alfredo or white sauce
- 1 C Mozzarella Cheese
- 1/3 C Parmesan Cheese
- 10 slices Mortadella, sliced thin
- Black pepper to taste
- Fresh dill, optional
Directions
Preheat the oven to 500 degrees.
Slice the pickle as thin as you can comfortably get it. The deliciousness of the pizza is in the balance and the pickle slicing is necessary! Dry gently with a paper towel.
Lay out your pizza crust and top with the alfredo sauce, spreading evenly over crust.
Cover sauce with half of the parmesan cheese.
Shingle the pickle slices all over the entire pizza, coast to coast.
Top pickles with half of the mozzarella.
Cover the top of the pizza with the slices of the mortadella.
Top the mortadella with the remaining parmesan and mozzarella. Grind a generous amount of black pepper over the top. Place our pizza in the oven and bake for about 5-7 minutes, or until the cheese is melted, bubbly and starting to blister! Enjoy! Garnish with fresh dill, if desired.
